And I went too many years without knowing how amazing raffaello cake really is. A delicious Ferrero candy (the lesser known sibling of Ferrero Rocher) reimagined and reinvented into an easy almond coconut cake, bringing all the candy flavors into a simple, single layer cake recipe.

Founded in northern Italy in 1946, confectionery giant Ferrero create luxurious chocolate that is appropriate for all occasions. Today, the Ferrero family includes Thorntons chocolate, Kinder, Nutella and, of course, the range of beloved Ferrero chocolates! Make the Sponge Cake: Preheat the oven. While it’s warming up, use a hand mixer or stand mixer to beat the eggs, almond extract, and sugar until it triples in size. Next, use a spatula to fold in the flour. Look for the mixture to be thin, and not have any granules of sugar. Freezer: You can freeze the entire cake by placing it on a baking sheet lined with parchment paper and popping it in the freezer uncovered. Once it’s completely frozen, carefully wrap the cake in a of couple layers of plastic wrap. Store it in the freezer for up to a month. To defrost it, allow it to thaw in the fridge overnight.

Turning Ferrero Raffaello into a great cake recipe isn't hard at all, I promise. Here are a few things to remember: Desiccated Coconut 25.5%, Vegetable Fats (Palm, Shea), Sugar, Almond (8%), Skimmed Milk Powder, Whey Powder ( Milk), Wheat Flour, Tapioca Starch, Flavourings, Emulsifier: Lecithins ( Soya), Raising Agent (Sodium Bicarbonate), Salt Ferrero Raffaello candies are rich and creamy with a hint of coconut. They come together easily and stay fresh for weeks.The cookie is made up of a spherical wafer which is filled with a white milky cream and roasted almonds. It is surrounded by a coconut layer with a white cream coating. This recipe is for an 8-inch round single layer cake. You can of course make in a square cake pan, but the larger you go with the size (ie. 9-inch pan) the thinner the cake and the less the cooking time, so please keep that in mind.
