Coastal cuisine from Asbury Park to Cape May, with 50 recipes from your favorite beachside restaurants and farm-fresh New Jersey ingredients for a perfect taste of summer. Once you’ve got a strong and mature sourdough starter, you can move onto the fun stuff – the bread! There are sections on creating and caring for your starter, and some kneading and shaping tips which are crucial to making a good loaf. Which is all to say that I’m never going to be a fish in these waters. Bread making just doesn’t come as naturally to me as to others. But I’ve still enjoyed getting to know the process of making sourdough with the recipes from the Super Sourdough cookbook.

I have chaired many conferences and meetings, spoken at conferences and events and often appear on radio and TV talking most about food, the business of food and being an entrepreneur.Super Sourdough by James Morton is a great cookbook for someone just starting their sourdough journey. But it’s equally good for those with a bit more experience, because it gets into the nitty-gritty of bread-making. Place the ribbons of courgette into a bowl, add the chopped chilli and lemon zest, season with sea salt, and set aside. Sea & Shore brings together the coast, the ports, the harbours surrounding Emily’s home kitchen, through over 80 simple and delicious recipes. Taking you through ebbs and flows of the seasons; from Spring tides and Summer Seas to the Cornish Autumn, the choice of dishes sees Emily using the ingredients sourced from the sea and land surrounding her restaurant’s doorstep. She is head chef at the glamorous Watergate Bay Hotel, in surfer and visitors ‘down-from-London’ hotspot Newquay. I’m also intrigued by the section covering ancient grains where the bread is made from everything but bog standard white flour. In 2019 I graduated from the University of Gastronomic Sciences in Pollenzo, Italy with a Masters in Food Culture, Communication and Marketing. I am now a visiting Professor at the university teaching Food & Drink Writing.

For toppings I chose some classics – sea salt (non-negotiable), fresh rosemary from the garden and sliced green olives (nothing fancy, just pitted olives from a jar). Sea & Shore is a distillation of foods, folklore, cooking and a respectful understanding of ingredients found along the Cornish coast and inland. This knowledge sit comfortably alongside culinary skills gained through time spent living in France, in Provence, Burgundy and Bordeaux. It’s how she developed her signature cooking, through a passion for simple, seasonal cooking with beautiful ingredients.Early June was a busy time for Emily, for the book was only published the day before the G7 dinner. Many of the recipes in the book are seasonally focussed So what did Joe Biden eat at that day that so entranced him at the G7 dinner at the Eden Project? Well, the menu for that day included Spiced Melon, Gazpacho, Coconut and high note herbs, for the starter, followed by a main of Turbot Roasted on the Bone with Cornish New Potatoes and Wild Garlic Pesto with Greens from local Padstow kitchen gardens. All in all, Super Sourdough by James Morton is a great cookbook for a sourdough newbie. It’s one I’d happily gift to someone interested in learning how to make bread.
